I Did it! I made another dinner that was eatable!

... and even repeatable! It was quite exciting. There are a few things I can make for dinner and feel confident about. Like baked mac and cheese, cornbread, baked ziti, quesadillas and enchiladas, homemade pizza, and even rice and pastas!! (So exciting, I know) However, to change things up I've been trying to reach out and try never before eaten recipes in a collection of books my friend and I have been sharing. Mind you, I really enjoy baking! Last week I've been experimenting with making biscotti different ways, and made a very successful blue berry pie.

But cooking, - is just simply scary sometimes!! There's raw meat and more than one or two things going on the stove - at the same time! Things have to defrost and simmer for periods of time. The hardest part though, is the person in the other room, 'taking over the world,' can throw dinner together without thinking and without any recipe. Yup, Mr. Jack Daniels himself has a wonderful knack for just whipping stuff up. He just throws stuff onto other stuff and then pokes at it and then - POOF - it's done and wonderful. Which is great! Until it's my turn.

Now, please, I want it to be my turn. I would like to be sufficient in the kitchen and have something to eat when Mr. Jack arrives home later than normal. Otherwise we're cooking while we're VERY hungry. So I'm trying. We'll see what happens tonight. It's just the slightest bit odd feeling that Jack Daniels over there can make it all work with such ease, while I'm having a panic attack over how much salt and pepper I should actually put in the pan, I mean my pinch might be smaller than the recipe writer, my thumbs aren't that big...

Weird, I just tried to comment and it blew it away...

I said..."Egads, you sound just like me! I can bake, but hate to cook. Cooking is very scary!"
